Kirby's Kitchen in Everett to Regroup, Go Back to Original Concept

A combination restaurant/market in Everett that opened earlier this year--and is run by someone who came from a popular Boston dining spot--is going to "reimagine" the concept of the eatery, reverting back to its original plans.

A Facebook post from Kirby's Kitchen on Broadway indicates that the place is going through a struggle--possibly because of the economy, its location, or a combination of factors--and it plans to concentrate more on selling hand-made products such as jams, cheeses, cured meats, condiments, and pickles, with less of a focus on the restaurant. Kirby's had been considering this concept when it was first planning the spot, but "the rapid birth of the restaurant" changed their plans a bit. Now, it will focus more on products that customers can take home, with the place becoming a mix of country market, deli, cafe, and bar. Kirby's will be closed for a few days while it revamps; as soon as it reopens, we will post an update here.

Kirby's Kitchen first opened this past January, with Bob Botchie from Myers + Chang on Washington Street in Boston's South End being behind the spot.
