Boston Magazine is reporting that Todd Bellomy and Daniel Krupp are planning to open Dovetail Sake in Waltham, with the brewery being in a warehouse where they will have 1,000 square feet of space to produce two styles of sake--a nigori and a junmai-shu. The article says that the Dovetail products should be available in stores sometime this winter, and that Bellomy and Krupp are actually looking to move the business into a larger space at some point in 2015 where they plan to have tours and tastings.
Bellomy used to be a brewer at Boston Beer Company and has also trained at sake breweries in Japan, while Krupp is a Level One graduate of the Sake Professional course with sake expert John Gauntner.
