Clover Food Lab Talks of Going National; Partnership with Whole Foods Also in the Works

The group behind a growing number of vegetarian food trucks and brick-and-mortar restaurants in the Boston area is looking to expand even more, with expansion being planned outside of the region and a partnership with a supermarket chain in development as well.

According to an article in the Fast Company site, Clover Food Lab is getting ready to open its first shop outside of the Boston area (in Washington, DC), with founder Ayr Muir hinting that this could be the first of many shops outside of the immediate area. In the article, Muir says that he would like to grow Clover nationwide, saying that "I think we should be as big as McDonald's one day." The article also mentions that a partnership with "Boston-area Whole Foods stores" is being worked on, though no details have been given.

Clover Food Lab first started out in 2008 as a food truck by MIT in Cambridge, and it now has trucks in various parts of the Boston area, with brick-and-mortar restaurants found in Cambridge, Brookline, and Burlington. Its website is at http://www.cloverfoodlab.com/
