A well-known Boston-area chef is going to be opening a new restaurant in the Inman Square section of Cambridge, taking over the space where a Mediterranean dining spot had been until closing a couple of months ago.
The City of Cambridge website reports that Will Gilson has applied for a beer and wine license for a new spot called Puritan & Co. (formerly bridgestreet), which will be located on Cambridge Street in the former Bosphorus spot (Bosphorus closed toward the end of 2011 after being in business for about a year). The new eatery will be a neighborhood place featuring regional New England cuisine (rather than New American fare, which was the original concept) and it will likely have a seating capacity of 110, with an additional standing capacity of 39. It appears that Puritan & Co. will be open for dinner only, with proposed hours being 5:00 PM to 1:00 AM Monday through Saturday, according to the Cambridge License Commission General Hearing post.
[August 13 update: The Boston Magazine Chowder blog reports that in addition to the upcoming restaurant being named Puritan & Co. (instead of bridgestreet), the focus will now be on "New England heritage," though the oyster and charcuterie bar and housemade vermouth will still be offered. It looks like Puritan & Co. could be open in October.]

Will Gilson had been a chef at the popular Cambridge gastropub Garden at the Cellar, leaving that place last year to work at a large-scale pop-up restaurant at Adrian's Restaurant in Truro last summer. He has also been involved with several pop-up restaurants in the Boston area.
