Ipswich Custom Opens in Former Merrill & Co. Space in Boston's South End

A new restaurant has very quietly come to the South End of Boston, and it moves into the space where another dining spot had been until closing under mysterious circumstances.

Eater Boston is reporting that Ipswich Custom is now open on Appleton Street, taking over the site where Merrill & Co. was until it shut down in June of 2014. As mentioned in an earlier article, the website for Merrill & Co. showed the message "Who wants to be a restaurant owner? at the time of its closure and soon started redirecting to the site whowantstobearestaurantowner.com, which it still does to this day. It is not known if that contest--where five prospective restaurant owners face off against each other to see who wins--will ever take place, but the Merrill & Co. space is now indeed home to Ipswich Custom.

According to EB, very little information can be found on Ipswich Custom, though the article says that the owner is Jake Elmets, who has worked at the Somerville butcher shop M.F. Dulock, and before that, Husk in Nashville and Reynard in Brooklyn.

[October 13 update: The Boston Globe mentions that Ipswich Custom is a "meat-focused restaurant" that also offers fermented vegetables and cheeses, with items on the menu including lamb collar and tuna belly. The article says that the place is currently open for dinner Tuesday through Saturday, though it may expand to include breakfast and lunch as well.]
